If using frozen clams, drain and reserve the liquid.
Cut hard parts from the clams and keep them separate.
Sauté the diced salt pork in a heavy iron pot until brown and crisp.
Remove the pork and sauté the hard parts of clams and the diced onion in the hot fat until the onion is light brown.
Stir in the flour, then slowly add the boiling water, salt, pepper, and diced potato.
Cover and simmer gently about 10 minutes or until the potato is tender.
Add the soft parts of the clams and the reserved clam liquid.
Just before serving, stir in the scalded milk and butter.
Heat the chowder thoroughly, but do not allow it to boil.
Serve piping hot with oyster or soda crackers.
