Chicken

Pound chicken breasts to about 1cm thickness and cut each breast into two pieces
Heat a frying pan over medium-high with the oil and fry the chicken 3–4 minutes per side until cooked through; season, reduce the heat, drizzle in the hotsauce and half the lemon juice, cook 1–2 minutes until the sauce is reduced, then remove from the pan
Preheat the air-fryer to 350°F for 4 minutes.
Air-fry the chicken 12 minutes, then drizzle with hotsauce and half the lemon juice and cook 1–2 minutes until cooked through; remove and keep warm
Toast the buns in a dry frying pan for 30 seconds and transfer to a plate
If using an air-fryer, warm the buns 1–2 minutes, increase the air-fryer to 400°F and cook the cheese for 10 minutes, turning halfway, until golden.
Toss the cabbage with the mayonnaise and the remaining lemon juice
Assemble the burgers: spoon dip into the toasted buns, top with lettuce, chilli chicken, cheese, and red pepper, drizzle with a little more hotsauce, spoon over the cabbage, and close with the bun lids
