Preheat the oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat.
Cream together the softened butter and powdered sugar until light and fluffy.
Add the flour, ground almonds, and vanilla to the butter mixture and mix until a soft dough forms.
Pinch off small portions of dough and roll into walnut-sized balls; place on the prepared baking sheet leaving space between them.
Press a whole almond into the center of each cookie and gently flatten slightly.
Bake in the preheated oven for 12–15 minutes or until the edges are golden brown.
Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
