Butter the bottom and sides of a 10-inch springform pan.
Crush animal crackers into a fine powder and mix with the crust sugar.
Combine the crushed crackers and sugar with melted butter and mix until blended.
Press the crumb mixture into the bottom and up about one third of the sides of the pan.
Refrigerate the crust for 1 hour.
Bring all remaining ingredients to room temperature.
Preheat the oven to 475°F.
Mix the cake sugar, flour and corn starch together.
Beat the cream cheese with the sugar mixture, lemon zest and vanilla until smooth, taking care not to overbeat.
Add the whole eggs and egg yolks one at a time, beating lightly after each addition.
Gently stir in the heavy cream.
Pour the batter into the prepared pan and place the pan on a cookie sheet to catch any leakage.
Bake at 475°F for 15 minutes.
Lower the oven heat to 225°F and bake for 1 hour.
Raise the oven heat to 250°F and bake for about 15 more minutes.
Refrigerate immediately for at least 1 hour, covered with a cloth and cookie sheet (cloth on bottom) until condensation stops forming.
