Breakfast

Combine flour, sugar, yeast and salt; add 2 cups lukewarm water to start and mix.
Knead the dough well, adding more water if necessary until soft and pliable.
Cover the dough and let it rest until it doubles in size.
Knead briefly by hand, divide into 12 portions and place on an oiled surface.
Let portions rest until each rises and doubles, oiling the surface occasionally.
Grease a work surface with oil and roll each piece very large and paper-thin with a rolling pin.
Brush each round liberally with melted butter.
Fold each round in half, roll it up into a rope and coil the rope into a spiral.
Cover and allow the spirals to rest until they rise and double in size.
Roll each spiral out again into a thin round.
Brush again with melted butter and repeat the rolling and coiling process.
Allow the dough to rest once more while covered until it rises.
Heat a skillet with a little vegetable oil.
Flatten the dough coils with your hands on a greased surface.
Place flattened portions in the skillet, cover with a lid and fry on medium-low until the bottom is amber.
Flip and fry the reverse side without the lid until cooked through.
Serve hot.
