Dessert

Combine the water and sugar in a small non-stick saucepan.
Cook over medium heat, dissolving the sugar and simmer until light brown without burning.
Swirl the pot to distribute the caramel evenly.
Set the caramel aside and let it cool.
Crack and beat the eggs in a large bowl.
Add the sweetened condensed milk and evaporated milk to the eggs and mix thoroughly.
Strain the custard mixture into the pot containing the cooled caramel.
Cover the top of the pot with aluminum foil.
Poke about 5–6 holes in the foil using a butter knife.
Place the smaller pot into a larger pot partially filled with water to make a bain-marie.
Cover the larger pot and simmer over medium heat until the custard is fully cooked (no residue on a butter knife).
Remove the flan from the stove and let it cool completely.
Invert the pot onto a plate to unmold the flan.
Refrigerate the flan and let it rest.
Cut the flan into slices and serve.
