Starter

Wash the beef bones with warm water.
Put the meat and bones in cold water and bring to a simmer; cook gently for 1½ hours, skimming foam and adding water as needed.
Cut the onion in half and brown it in a pan without oil to deepen the broth color.
Add the vegetables and a pinch of salt to the broth and cook for 20 minutes, then strain out solids.
Mix the eggs, milk, flour and salt together to make the pancake batter.
Heat butter or oil in a frying pan.
Pour batter into the hot pan and cook until set, then flip and cook the other side.
Let the pancake cool and cut it into thin strips.
Place the pancake strips into the finished strained broth.
Serve the soup topped with minced chives.
