Cut carrots into matchsticks.
Boil carrots in salted water until tender; drain.
Rinse carrots with cold water and drain.
Toss carrots with sesame oil, ground sesame seeds, garlic, and salt.
Place spinach in a pot with 1 inch of water.
Bring spinach to a boil and cook until wilted and reduced.
Drain, cool with cold water, and squeeze out excess water from spinach.
Slice spinach into 1-inch pieces.
Mix spinach with sesame oil, ground sesame seeds, and garlic.
Blanch bean sprouts in salted water until translucent; drain.
Drain and transfer bean sprouts to a bowl.
Toss bean sprouts with sesame oil, ground sesame seeds, garlic, and salt.
Slice steak thinly.
Heat oil in a pan and stir-fry the beef.
Add sesame oil, ground sesame seeds, and garlic; cook until browned.
Add soy sauce and cook until liquid evaporates.
Divide rice among bowls.
Arrange namuls, beef, cucumber, kimchi, and egg atop the rice; serve gochujang on the side.
Rub inside of dolsot with sesame oil (if using dolsot).
Spread rice in dolsot and arrange namuls and beef on top.
Cover and cook dolsot over medium-high heat until rice crisps on the bottom.
Add an uncooked egg to the center of each dolsot.
Scrape rice from the bottom and stir ingredients together to eat.
