Rub flour, margarine, lard, and salt together until the mixture resembles fine breadcrumbs.
Add 2 tablespoons cold water and mix into a soft but firm dough.
Roll the pastry on a floured surface to desired size and make two crusts.
Place one crust in a pie pan.
Peel and slice the apples into 1/8 to 1/4-inch thick segments.
Add lemon juice to the sliced apples.
Mix the apples by hand with 1/2 cup sugar and a few dashes of cinnamon.
Transfer the apple slices (leaving behind released juices) to the pie pan.
In a separate bowl mix the remaining sugar, cinnamon, nutmeg, flour, and cornstarch.
Pour the dry mixture over the apples in the pie pan.
Dot the apples with salted butter.
Cover the apples with the second crust.
Firm down and seal the edges of the crust with a fork or finger.
Cut vents (heart or diamond-shaped) into the top crust.
Brush the pastry top with milk and sprinkle additional sugar and cinnamon over the top.
Bake at 350°F until golden brown, about 60 minutes.
Remove the pie from the oven and let it cool slightly on the counter.
Serve warm with ice cream or custard.
