Place the ham in a very large pan, cover with 2 litres water and bring to the boil
Remove from the heat and drain off the water
Refill the pan with 2 litres cold water and bring to the boil
Add the soaked peas, chopped onions, chopped carrots, bay leaves and chopped celery to the pan and bring to the boil
Reduce to a simmer and cook for 1½–2½ hours, topping up water as needed and halve the ham if necessary to keep submerged
Lift the ham out of the pan
Peel off and discard the skin, then shred the hot ham
Remove the bay leaves from the soup
Stir the frozen peas into the soup
Simmer for 1 minute
Blend the soup until smooth
Add a splash of water if the soup is too thick and return to the pan to heat through if needed
Mix most of the shredded ham into the hot soup
Ladle into bowls, scatter the remaining ham on top and serve with crusty bread
