Beef

Fry onions in oil until lightly browned, then remove and drain.
Rinse beef bones, place in a stockpot, cover with cold water, bring slowly to a boil, then reduce heat and simmer 10–15 minutes, skimming foam for a clear broth.
Add cooked onions, ginger, cinnamon, cardamom, star anise, cloves, garlic and peppercorns; bring to a boil again then simmer partially covered for 6–12 hours, skimming and adding water as needed.
Strain the stock to remove vegetables and spices, discard solids, and return the broth to keep it boiling hot.
Soak phở noodles in hot water until soft, then drain.
Assemble each bowl: place cooked phở noodles, top with thinly sliced raw beef, ladle very hot broth to cook the beef, and garnish with sliced onions, scallions and coriander.
Arrange condiments (chile peppers, bean sprouts, limes, Thai basil, fish sauce, hot sauce, hoisin sauce, black pepper) on a serving plate for diners to add to taste.
