Dinner

Trim kale leaves and soft stems and soak in cold water for 5–10 minutes
Slice the onion, mince the garlic, and dice the tomato; set aside
Remove kale from water and cut into chunks
Cook bacon in a saucepan until crispy
Add sliced onion, minced garlic, and thyme to the pan and stir for about a minute
Add diced tomato, red pepper, and paprika and sauté for 2–3 minutes
Add the chopped kale, mix, and steam until leaves are tender (6–8 minutes), adding a little water as needed and adjust seasonings
Cut both ends off each plantain, slit the peel lengthwise, and remove the peel
Slice plantains lengthwise into medium-size pieces and set aside
Coat a large frying pan with oil spray and spray the tops of the plantains
Fry the plantains over medium heat, shaking the pan occasionally and adding more oil spray as they brown
Remove plantains and serve with the cooked kale
