Place lentils in a large saucepan and add water or stock to cover by at least 2 inches.
Cook lentils at a boil for about 30–45 minutes, or follow package instructions.
Drain cooked lentils in a fine sieve and allow to cool.
Sauté carrot and celery in butter and olive oil over medium heat until softened (about 10 minutes).
Add minced onion and dried parsley to the vegetables just before they are done.
Combine drained lentils and the cooked vegetable mixture in a large bowl and mash lightly, leaving some lentils whole.
Taste and adjust seasoning with garlic salt, salt, and pepper as needed.
Add the eggs and about ¼ cup bread crumbs, stir, and add more bread crumbs until mixture is slightly moist but not wet.
Form the mixture into patties, layer between waxed paper on a plate, cover, and refrigerate for at least 1 hour.
Cook patties on a sauté pan or griddle over medium to medium-high heat until warmed through and a crust forms, about 3–7 minutes per side depending on thickness.
Serve on buns with desired accompaniments or without buns with grilled pineapple or sauce.
